If you’re in the mood for something soul-satisfying, spicy, and purely comforting—look no further. This Chhole-Bhature recipe is my go-to dish when I want something indulgent but made with love and intention.

This isn’t your quick snack. This is the kind of dish that gathers people around the table, gets you compliments, and leaves everyone asking for seconds. 💛


Let’s Start with the Bhature (Fluffy Fried Bread)

🧂 Ingredients:

  • All-purpose bleached flour (Maida)
  • Plain yogurt (curd)
  • Vegetable oil (for frying)

👩‍🍳 Steps:

  1. In a large bowl, knead maida with plain yogurt only—no water at all. The dough should be soft but firm.
  2. Let it rest for 10 minutes.
  3. Roll out dough balls slightly thicker than a chapati or tortilla.
  4. Fry them in hot vegetable oil until golden and puffed.

Now breathe in that aroma—it’s magic. 🌟


🥘 Now, the Chhole (Spiced Garbanzo Curry)

🧅 What You’ll Boil First:

  • 2 medium onions
  • 5 garlic cloves
  • 2-3 green chilies (adjust to taste)
  • 1 inch chopped ginger root

Boil everything together in a pot or pressure cooker until soft.

🔥 While that boils…

  • In a separate pot, sauté 1 thinly sliced red onion with a pinch of cumin in oil.
  • Once the onion softens, drain your boiled mix and add it in.
  • Sauté together for 5–10 minutes, allowing everything to blend and brown lightly.

🧂 Spices to Add:

  • ½ packet of store-bought Chhole Masala
  • A few pinches of salt
  • Optional but recommended: 1 tsp Garam Masala

🫘 Add the Star Ingredient:

  • 1 can of rinsed garbanzo beans (cooked)

Mix well and sauté for another 5 minutes.

💧 Finishing Touches:

  • Add 1½ cups of hot water, stir well, and cook for 5 more minutes.
  • Garnish with fresh cilantro and a squeeze of lime juice.

🌿 And there you go—Chhole-Bhature that tastes like love, spice, and Sunday mornings.
